02 - In a heatproof bowl, melt butter and dark chocolate together, microwaving in 30-second bursts and stirring between each until smooth.
03 - Whisk in sugar, then add eggs one at a time. Stir in vanilla extract, espresso powder, and peppermint extract until thoroughly combined.
04 - Sift flour and salt into the mixture, folding gently until just combined without overmixing.
05 - Spoon batter evenly into prepared muffin tin, filling each about three-quarters full.
06 - Bake for 16 to 18 minutes or until a toothpick inserted comes out mostly clean with a few moist crumbs. Allow to cool completely in the pan.
