# Preparation Steps:

- Preheat oven to 400°F. Line a baking sheet with parchment paper.
- Cut puff pastry into diamond shapes. Place on baking sheet, brush lightly with beaten egg, and sprinkle with sugar. Bake for 12–15 minutes until golden and puffed. Allow to cool.
- Heat milk and vanilla extract in a saucepan until just simmering. Whisk egg yolks, sugar, and cornstarch until pale in a bowl. Gradually whisk in hot milk. Return mixture to saucepan and cook over medium heat, stirring constantly until thickened. Remove from heat, cover surface with plastic wrap, and chill.
- Melt white chocolate in a heatproof bowl over simmering water. Pour onto parchment paper and spread thinly. When slightly set but pliable, cut into diamond shapes. Chill until firm. Decorate with edible silver leaf if desired.
- Arrange puff pastry diamonds on a large serving platter. Pipe or spoon vanilla cream onto selected pastries. Add white chocolate diamonds and scatter jewel fruits around. Garnish with edible flowers, fresh mint leaves, and dust with powdered sugar.
