04 - Spread pasta in a single layer on the baking sheet and bake for 18 to 22 minutes, flipping halfway through, until golden and crisp. Allow to cool for 5 minutes.
05 - In a small bowl, mix sour cream, mayonnaise, lime juice, chili powder, salt, and pepper until smooth. Set aside.
06 - On an oven-safe platter or skillet, layer half of the baked pasta chips and sprinkle with half the cheeses. Add the remaining chips and top with the rest of the cheese.
07 - Return platter to the oven and bake for 3 to 5 minutes until cheese is melted and bubbly.
08 - Top with diced tomato, red onion, jalapeño, fresh cilantro, and diced avocado. Drizzle evenly with the zesty sauce and serve immediately.

# Expert Advice:

01 -
  • It feels like a fun party trick but comes together in under an hour, which means you can actually enjoy your guests instead of being stuck in the kitchen.
  • Everyone expects nachos, and then you show up with something crispy, cheesy, and completely unexpected that somehow tastes even better.
02 -
  • Don't skip patting the pasta dry after boiling—any moisture clinging to it will steam instead of crisp, and you'll end up with chewy disappointment.
  • Assemble the whole dish on something oven-safe because you'll need to put it back in the oven for the cheese, and I learned this the hard way with a regular platter that started smoking.
03 -
  • Try these in an air fryer at 200°C for 12 to 15 minutes if you want even crispier results and less oven space taken up during a busy kitchen day.
  • Add black beans, corn, or olives to the cheese layer for variety without making the whole thing feel chaotic or overstuffed.
