- Decoration (optional): 2 cherry tomatoes sliced 2 tbsp pomegranate seeds Fresh basil or parsley leaves
Instructions
- Step 1:
- Using a star shaped cookie cutter cut a star from each bread slice Reserve the scraps for breadcrumbs or another use.
- Step 2:
- In a bowl mix cream cheese and mayonnaise until smooth.
- Step 3:
- Stir in red and yellow bell peppers cucumber carrot and chives Season with salt and pepper.
- Step 4:
- Spread a generous layer of the vegetable cream cheese mixture onto half of the star shaped bread pieces.
- Step 5:
- Top with the remaining bread stars to form sandwiches.
- Step 6:
- For decoration gently press slices of cherry tomato pomegranate seeds and herbs into the top of each sandwich to resemble jewels.
